Potatoes and carrots with turmeric

INGREDIENTS:

  • 2 medium potatoes (approx 600g)

  • 2 large carrots

  • 1 small onion

  • 1 tbsp turmeric

  • 2 tbsp Extra-virgin olive oil

  • black pepper (quantum satis)

  • chili pepper (q.s.)

  • salt (q.s.)

 

“Turmeric should be taken with small pepper doses to be adequately absorbed”

 

PROCEDURE:

  1. Peel the potatoes and carrots and cut into thick slices
  2. Peel the onion and shred it finely, let it sautéing lightly in olive oil
  3. When the onion turns golden add the potatoes and carrots, a bit ‘of water, a pinch of salt and cover it
  4. Let them cook for about 20 minutes and if necessary add more water
  5. When the potatoes and carrots are ready, add black pepper, chili pepper and turmeric and brown everything
  6. Serve warm
